Pool House and Gym Space

I am putting in 10 inch white oak plank floors. I am trying to decide on shiplap walls- vertical or horizonal and what width? We have a catherdal celing with various heights and angles. I am thinking of putting a smaller version of the floor on the ceiling white washed but trying to figure out our options.
