Is it too matchy if ceiling and trim paint are the same color?

No because usually the trim will be in a higher gloss so they will look different.

I agree. It has a nice "finished" look when you bump up the sheen and keep the same color.

I think if you select a wall color that is too well coordinated to the tile, it will only bring out the vibrant pattern in the tile. So pick colors you like. Let your personal style and the vibe of the rooms dictate the colors. Your walls, furnishings and accessories will take center stage so you won't really notice the tile. Area rugs will down play the tile too. Ceilings are a great opportunity to add color also.

Your second photo brings me right to the stairwell scene in Hitchcock's "Vertigo," although I realize I'm looking up, not down. It's really rather wonderful. I'm just wondering, looking to the upper left in particular, if it's been recently checked out by a structural engineer. As for paint, I'll be interested to see what others say. For me, who doesn't do a lot of white, I think I actually would stay with a white here. A muddy green might be nice as well, but you'd need to incorporate a bit of lighting -- perhaps uplighting along the beams unseen from below, with something amazing hanging from that cool, crazy peak you have. I'd paint it all (walls and trim) the same scrubbable, matte color. Probably a soft grey. One that compliments the cabinetry as well as the flooring. Best of luck, please post photos when complete!

Well, you don’t want your trim to be glossy. You want semi-gloss and yes, they can, and yes, there are multiple finishes in every paint line. Have a chat with your painter. Go with Benjamin Moore White Dove in SEMI-GLOSS,

Agreed. We typically use Ben Moore cc40 in two different sheens. Ceiling flat and something like pearl or satin for trims...cc50 and Acadia white are also lovely...

It is not too matchy if ceiling and trim are the same color. However, it looks really nice to put a good coordinating neutral on the ceiling. It can add a lot of depth to the room as well as accentuate the crown molding around the ceiling.
