Our Hoboken pull out was open on both sides too which was great, but these pull outs are up against a wall so we couldn't access them from the other side anyway. We do not find that things slip out at all. The small lip seems to do a fine job of keeping things in.

Reply to: 42 inches wide will provide better capture. Assume 42 x 24, then the hood entry area is roughly 3.5 x 2 = 7 sq. ft. Allocate 90 CFM/sq. ft. to yield 630 CFM (actual). Blower rating should be in the range of 1.5X that or between 900 and 1000 CFM. Duct should be at least 8 inch diameter. If there is room in the duct path for a silencer, then a roof blower will be fairly well quieted. You will need a make-up air plan that will depend on the presence or not of combustion appliances.
