Hello! Unfortunately, we do not have this exact information. Typically our builders are using either Benjamin Moore or Sherwin Williams for their paint brand. A close match to this color would be Benjamin Moore’s, White Dove, which may be what was used.

I think if you select a wall color that is too well coordinated to the tile, it will only bring out the vibrant pattern in the tile. So pick colors you like. Let your personal style and the vibe of the rooms dictate the colors. Your walls, furnishings and accessories will take center stage so you won't really notice the tile. Area rugs will down play the tile too. Ceilings are a great opportunity to add color also.

Your second photo brings me right to the stairwell scene in Hitchcock's "Vertigo," although I realize I'm looking up, not down. It's really rather wonderful. I'm just wondering, looking to the upper left in particular, if it's been recently checked out by a structural engineer. As for paint, I'll be interested to see what others say. For me, who doesn't do a lot of white, I think I actually would stay with a white here. A muddy green might be nice as well, but you'd need to incorporate a bit of lighting -- perhaps uplighting along the beams unseen from below, with something amazing hanging from that cool, crazy peak you have. What is the space behind your shower currently? Is it closet or exterior? Is it possible to absorb that space into your shower for a bench or just to simply enlarge it? For your doors. Your shower door will need to swing out, or you can do a shower with only an opening and no door. Have you considered a "Neo-angle" shape instead of a rectangle for the shower to help the traffic flow too? The door closest to I should be the pocket/sliding door. And the door closest to the toilet should swing into the bathroom. here is an example of a neo angle shower:
