Kitchen splashback dilemma

Just replaced my old kitchen and love it. Now for splashback. Would love to have stone but cannot afford it so I am opting for subway tiles.
Kitchen cupboards: Dulux matt White on White VJ 2-Pak finish.
Bench top: Quantum quartz stone Lunar white
Handles: Black steel. Floor tiles(old) 450x450mm and will not be replacing: gloss white with very slight grey swirl
Splashback: Thinking pale grey matt tile 300mmx60mm or 200mmx100mm
? light grey or white grout (thinking will grout definition make it all too busy with VJ cupboards?
Or keep it all white with white subway tiles? Last question: Am I on the right track with matt tiles and not gloss
Will have a feature light oak shelf above tiles which will be laid to 600mm high
